Paleo Soft Pretzels

I have always loved nice warm, soft pretzels. Going to the mall and stopping at the pretzel store was always a favorite treat of mine. But now, I love making healthier versions of my favorite treats at home. This has become a family favorite to make.

Have you ever wondered how pretzels originated? Legend has it that either an Italian or French monk invented the first soft pretzels in 610 A.D. The pretzels he made were rewards for children that had learned their prayers. These twisted tubes of bread were created to symbolize arms folded in prayer.

Soft Pretzel Dough Ingredients:

12 eggs

⅓ cup Maple Syrup

¾ cup Melted Coconut Oil

¾ tsp.  Baking Soda

4 Tbsp. Apple Cider Vinegar

1 Tbsp. Pink Himalayan Salt

3 ¼  cups Cassava Flour

3 ¼ cups Arrowroot Flour

Soft Pretzel Topping Ingredients:

1 egg

Coarse Sea Salt

Soft Pretzel Directions:

1. Combine all ingredients in the order listed in a KitchenAid mixer. Add the flours in slowly. If using a hand mixer, use only until the dough gets thick, and then finish mixing with hands.

2. Roll pieces of the dough into tube shapes. Fold into pretzel shapes or leave as pretzel sticks, or any fun designs you want!

My kids really love helping to make the pretzels, as they say it is like playing with Play-Doh when rolling the pretzels into tubes or whatever fun shapes they want to make.

3. Bring a pot of water to a boil over medium heat. Then add the pretzel shapes or pretzel sticks to the boiling water for one minute. Only add enough at a time for one layer in the pot, so the pieces don’t stick together. Remove pretzels from boiling water with tongs, a mesh strainer, or large spoon

4. Set the pretzels onto a parchment or silicone lined baking sheet.

5. Beat one egg in a small bowl. Use a silicone brush to “paint” the egg onto the top of the boiled pretzels.

This is one of my kids’ favorite parts, as they love to paint.

6. Sprinkle coarse sea salt onto the top of the pretzels. 

7. Bake at 400°F for about 20 minutes, or until golden brown. 

One thing I have learned as a parent, is to let my kids enjoy the process. It doesn’t all have to be perfect. As you can see, we ended up with many broken pretzels. But guess what? Even the broken ones taste just as delicious. And my kids were able to enjoy the process of making them. If you look closely, you’ll even see a heart shaped pretzel and some in the shape of peace signs.
